Protein Filled Chocolate Chip Oatmeal Kodiak Cakes Cookies
 

 

These protein filled, chocolate chip oatmeal cookies are INCREDIBLE!  I recently discovered Kodiak Cakes pancake mix at Costco and am have been so impressed with it.  Per serving, the mix has 14 grams of protein, 3 grams of sugar, and 5 grams of fiber.  It's 100% whole grain and can be used in SO. MANY. WAYS.  So far I've only made the pancakes and this adapted cookie recipe, but I can't wait to try some of the savory recipes (pizza crusts, cheddar bacon zucchini bread, and mini quiches to name a few!).  Use the link below to order on Amazon!


I only added chocolate chips to mine, but they would also be great with nuts, raisins (or other dried fruit), m&ms, reese's, peanut butter...you name it, it would probably taste good in these cookies.  

PREP TIME: 10 minutes
COOK TIME: 7-10 minutes (on 350 degrees)

INGREDIENTS: 
1 1/2 cups Kodiak Cakes Flapjack Mix
1 cup quick oats, blended (I blended mine, but if you don't want to they would still be great!)
2 cups of chocolate chips (or whatever you decide to add)
3/4 cup of melted butter
1 1/2 cup of brown sugar (they were very sweet--I might try to add less sugar next time!)
1 tablespoon of vanilla
1 egg

Instructions: preheat oven to 350.  Mix (by hand or in a mixer) melted butter, brown sugar, egg, and vanilla.  Add Kodiak Cakes mix and blended oats and mix until incorporated (DO NOT OVERMIX!).  Add chocolate chips or other additions and fold in gently.  Bake for 7-10 minutes and ENJOY!

TIP:  I always add aluminum foil to my cookie sheet before baking.  Once the first batch is done just remove the cookie sheet from the oven and (using oven mits!) pick up the foil and place it on the counter or on a cooling rack.  This allows you to cool your cookies and bake more cookies faster!

    I used 1 cup of brown sugar, 1 cup of original Kodiak cakes and 1/2 cup of the Carb Conscious Kodiak mix (b/c I ran out), and old fashioned oats (not blended).

    Such a good alternative to normal cookies with added protein without the chalkiness of protein powder.

    1. I add the ingredients to a recipe app that calculate per serving. I used 45 servings at 1 Tbsp per ball and this was the result
      136 calories per serving
      6 points
      2 grams protein
      7 grams fat
      17 grams carbs
      45 servings

  5. I would use parchment paper instead of foil. Person I have foil to leave a metallic taste when baking but that is my preference

  8. i did in grams to experiment,

    300g or 1&1/2 cup kodiak mix
    150g or 1 cup oat flour
    110g or 3/4 cup brown or coconut sugar
    1 egg
    1 tbsp vanilla extract
    100g or about a cup chocolate chips (i used hersey zero sugar)
    1&1/2 stick of butter

    i rolled them into 27 balls and flattened them

    350 for 7-12 min

    around 140 cals
    2.5g protein
    17.5g carb
    6.9g fat
